Layers. It’s all about the layers when it comes to our beers. Binded By is a showcase in how the delicate process of dry-hopping our beers can create an absolute blossom of flavour. We’ve gone with a big Simcoe addition on this beer on the hot side to bring all those oils to the party like no other hop can – imparting a perfect foundation of earthy bitterness, with just a whisper of citrus zest and herbal complexity. Where to go from there? Layers, that’s where. Equal additions of Citra, El Dorado, Enigma, Idaho 7 and Mosaic in the dry-hop charge take this beer on a snaking path, bringing out the best flavour profiles from each of these hops. Think tangerine and bubblegum sweetness, marmalade, mango, grapefruit and red berries to offset our Simcoe base, all smashed into a pale ale perfect for knocking back in pints with pals.
