A rustic saison made in collaboration with Jester King from Austin, Texas.
The golden saison beer was made with local honey, raw barley, spelt and Texan aged hops. Aged in stainless steel for four months with our mother culture of wild yeasts and microbes before bottle conditioning.

75cl bottle @ monthly tasting, Chez Sophie, May 23. Thanks Mike for this one! Misty gold appearance, small white head. Wonderfully fresh and zesty, tart lemon moments with subtle floral honey shades on the finish. Very well balanced. Fantastic sour.
