Cider made with Cheddar in Mind
With the direction of Lilly Morris from Morris's of Usk and Sam Wilkin of Cellarman Sam this is a blend aimed at exploring the fruitier drier cider to pair with traditional farmhouse cheddar cheeses.
Herefordshire, where Oliver's is based, is a region that knows good cheese, and it's a natural combination, one well known to cider makers & dating back centuries - drinking their ciders with the local cheeses.
This iteration centres around three famous cider apples, the Yarlington Mill with its floral spice and bitter fruitiness, Foxwhelp with bright citrus acidic zing and some barrel aged Michelin cider for added structure and depth. This all wraps together wonderfully like a clothbound farmhouse cheddar. Abv 6%.

Appearance - murky orange to brown. Gently carbonated. Slight head.
Nose - tangy apple and bruised apple. Hay and wood.
Taste - bruised apple and red apple skin.
Palate - medium bodied, tangy bittersweet middle and finish.
Overall - good!

Panda from Danlo, cheers Ed. Pours mild hazed orange to gold, with a rim of white foam. Aroma: juicy apple, apple skins, funk. Taste: towards moderate sweet, tangy, apple orchard, apple skins, hedgerow, caramel, funky, tannins. Medium body with light carbonation. Very nice indeed.

14/11/2024. Bottle shared by danlo, cheers Ed. Pours very slightly hazy golden orange with a few bubbles. Aroma is citric, fleshy apple, hedgerow, lightly funky. Moderate sweetness, light bitterness and tartness. Medium body, average carbonation. Lovely drying tannic bittersweet finish. Very nice.

Panda at home thanks to Ed Danlo. A mostly clear deep orange coloured pour with a small loose white head. Aroma is nice fresh juicy apple, mild funk, brown sugars, intense juiyct apple, light tang. Flavour is composed of juicy tart apple, apple curd, light toffee sweetness, pinch of quince. Palate is semi sweet, light tart, moderate carbonation, nice stuff.

Panda at home, thanks to Ed Danlo, 20/10/24. Almost clear orange golden topped with a fast collapsing white head. Nose is tarte apple, light funk, tannins, damp wood, hedgerow, apple skin. Taste comprises bitter sweet apples, caramel, vinous trace, light sugar dusting, modest acidity. Medium bodied, fine carbonation, drying close. Solid flavoursome drop.

750ml bottle with hand written label from Tom Oliver. Drunk along with some cheddar wrapped in Herefordshire hops. Hazy orange gold colour, white foam rim and aroma of apple, fruit, funk. Taste is sweetish, tangy, apple, fruity, orchardy, leather, funky, with bittersweet tannins. Medium bodied, light carbonation, dry fruity tannic finish. Very drinkable, the cheddar brings out the fruity notes.
