Old for new. For this beer we travelled to Siren Craft Brew to select white and red wine casks, some as old as four years. Then the guys journeyed to Scotland to choose from our young barrels. The results were balanced at OverWorks and refermented on local Elgin blackberries and Italian culinary sage. Yielding a complex, rustic beer that is not just a blend of barrels, but a blend of tastes, times and dedication to craft. This is collaboration t it's most powerful and fundamental.

Very huge whtie head with a faint cream layering over spectacular clear ruby-copper beer. Fruity nose, cassis, liqueurish. Fruitsugars, but not syrupy smelling. valerian, blackcurrant leaf, faint wood. Quite sour, yet there is faint biscuity oxydation. Vanillacream cookies. Lactic, but also lightly acetic acid. Slightly metallic copper flavour in the very finish. Lipsmacking acidity, very serious acidburn and some acidthinning. Dry-out effect, long lasting. And another one with just too much acidity onslaught. The winecasks already having acetobacter, maybe?

murky purple color. Frothy white head. Strawberries, blueberries tart nose with good oak character. Tart palate, tons of fruit, dry but a touch of underlying sweetness.

Draft. A hazy red beer with a lazing beige head. The aroma has notes of black berries, brett, funk, and lemons. The flavor is sour with notes of acetone, blackberries, brett, funk, herbs, and lemons, leading to a tart finish.

On tap BrewDog Seven Dials London. Deep red colour lasting pink head. red fruits aroma red fruits red wine red frape flavour. some moderate sourness on the finish. not authentic funk but not too bad either. light red fruits yoghurt . vanilla on aroma from the wood. very refreshing and good fruit. Good ageing. balanced BlackBerry sourness on finish. like eating blackberries in a sour vanilla cream. Good.
