Old for new. For this beer we travelled to Siren Craft Brew to select white and red wine casks, some as old as four years. Then the guys journeyed to Scotland to choose from our young barrels. The results were balanced at OverWorks and refermented on local Elgin blackberries and Italian culinary sage. Yielding a complex, rustic beer that is not just a blend of barrels, but a blend of tastes, times and dedication to craft. This is collaboration t it's most powerful and fundamental.

Bottled 500ml. -at Craft Room Zagreb. Red wine coloured, small off-white head, berries and light sage in the nose. Tart berries, red wine, noticable sage and strong tart finish. Mild touch of spices as well. Well done.

Keg at Siren. Dank with a musky tart berry core. Ruby in colour. Pink tinged white head just clings to the rim. Medium-heavy sour. Vinous with underlying berry juice. Medium bodied. Slick. Soft-fizzy carbonation. Long dry astringent finish. Chocfulla berries sour. Yum.

(Draught at BrewDog Camden, London, 25 July 2019) Reddish amber colour with frothy, off-white head. Fruity, sourish nose with black-currant, blackberries and dark fruit. Fruity, tart taste with notes of black-currant, blackberries, lemon and a tart and dry finish. More than medium body, quite dry. Tasty and refreshing, with lots of tart berries. Nice one.

Draught @ Highlanders Bar, Aarhus. Pours clear dark reddish brown with an offwhite head, lacings. Aroma of malt, sourness, yeast, funk, wood, leather, red berries, cherry. Flavor is very sour, malt, yeast, leather, wet wood, oak, tart fruit, acetone. Medium body, soft to average carbonation, dry and very acidic finish. 261019

Tap at Unorthodox. Assertively funky lambic-like barnyard character, rather subtle vinous notes, also sage at a very subtle level, rather revealing itself as it progresses. That much is true of the blackberry too, even though there is a bit more of that than the rest. But the lambic character beats all, very wild one. Quite sour too, dry. Very good.
