Old for new. For this beer we travelled to Siren Craft Brew to select white and red wine casks, some as old as four years. Then the guys journeyed to Scotland to choose from our young barrels. The results were balanced at OverWorks and refermented on local Elgin blackberries and Italian culinary sage. Yielding a complex, rustic beer that is not just a blend of barrels, but a blend of tastes, times and dedication to craft. This is collaboration t it's most powerful and fundamental.

Tap at Siren with Dad, 7th September 19. Pours a pretty light red colour, slight head. Aroma is heady and tart fruit. Taste is tart blackberries, vinous notes, slight sage every now and then, delicious

Tap. Red color with small pinkish head. Aroma of berries, some herbs. Taste, blackberries, very light herbal notes and this is all. Good one.

Keg at BD Canary Wharf, 31/07/19. Claret red with a cap of faded crimson bubbles that dissipates edgeward. Nose is red berry funk, light herb, tangy berry fruits, wood must. Taste comprises red grape skins, vinous trace, acidic bite, mixed berry yoghurt, damp hay. Medium bodied, fine carbonation, semi drying close with a sharp berry climax. Decent sour ... has an acidic rise but it’s kept in check.

ABV: 6.3%. Unclear medium to dark red colour with a small to average, frothy, good lacing, mostly lasting, off-white - pink head. Aroma is moderate malty, wheat, moderate yeasty, leather, tart, funky, blackberry. Flavor is moderate sweet and light to moderate acidic with a long duration, tart, dry, blackberry, funk, wheat, sage notes. Body is medium, texture is oily to watery, carbonation is soft. [20190731]

Keg at Brewdog tower hill. A light hazed deep plummy red coloured pour with a a lasting pink froth. Aroma is salty red berries, sage, tangy lacto, cherry, blackberries, tart red berries. Flavour is composed clean tart red punnet fruits, blackberries, smoky cherry, mellow yogurt funk, mellow pucker, pinch of salt in the finish. Palate is nice semi sweet and sour, nice fullness, mid pucker, highish airy carbonation. Spicy finish.
