Sparkling Medium Fine Cider

Oliver's Cider favourite bittersweet cider apple, Yarlington Mill 95% with a 5% addition of two bittersharp apples, the Frederick and Foxwhelp, to help balance up the full bodied nature of the Yarlington Mill variety with some acidity. All Herefordshire Yarlington Mill apples, probably the best in the country.

This cider has finished its fermentation in the bottle, creating lively fizz and mousse in the glass. The classic Yarlington Mill floral and spicey nose. Soft tannins with clove and nutmeg character with ripe red apple fruit. The natural sweetness allows the gentle earthy apple and floral spice to fill the mouth and the blend of the bitter sharp apples keeps the acidity enough to make for a thirst quenching Herefordshire Yarlington Mill cider. Chill well before opening carefully.

Panda at home, thanks to Ed Danlo. A light hazed deep orange coloured pour with a fine white cap. Aroma is dry woody apple pips, bark. musty apple. Flavour is composed of semi sweet, semi dry apple, tcp, herbal, musty funk, golden apple. Palate is semi sweet, light tart, moderate carbonation.

Panda at home, thanks to Ed Danlo, 23/08/24. Oliver's rate #100. Golden copper pour with a white crown of bubbles that soon shift to the edge. Nose is funky apple, barnyard nip, herb, vinous, oak, damp straw. Taste comprises apple core, tannins, herb, hedgerow, touch of caramel, modest funk, apple skins, just a hint of acidity. Medium bodied, soft carbonation, drying close. Solid cider.

750ml wired cork bottle from RAD beer. Cork self ejected with a very loud pop. Slightly hazed orangey gold colour, large foamy head that quickly dissipates away and aroma of leathery funk, apple, fruity. Taste is sweet, tangy, fruity apple, juicy, and horseblanket, funky, leather, orchard floor, with bittersweet drying tannins. Medium bodied, spritzy carbonation, dry tannic finish. Very drinkable.

75cl bottle from Appellation Wines. Appearance - golden and fairly clear with frantic carbonation. Nose - baked apple but sharp apples. Some hay. Taste - more baked apple, but still with a bit of fresh fruit acid. Palate - medium bodied, tangy bittersweet middle and finish. Overall - good.

Bottle pour at The London Cider House, explodes upon opening, pours a clear bright golden with a monstrous white head. Aroma is full of black pepper, intense barnyard funk, and champagne-like effervescence. Flavour is super complex, with wonderfully complex barnyard funk, champagne-like effervescence, black pepper, and hay. There's also considerable residual sweetness that melds with the black pepper character. Such an interesting, complex cider.
