Our Barrel-Fermented and Barrel-Aged Saison Collaboration with our dear friend Averie of Keeping Together.
Oak Aged Dry-Hopped Saison - Brewed and blended with our friend Averie Swanson of Keeping Together, this delicate Table Saison was brewed with rye malts, fermented in French oak puncheons with a blend of house cultures from both of our homes and finished with a soft, noble dry-hop before being bottle conditioned for several months and shared with you.

Brewing draught, 10/1/23. Clear, bright golden. Large, fluffy, white head, well-retained. Classic saison notes with hints of peppery sacchs and lovely grains including wheat, biscuit, light bread. Just emerging Brett. Snappy, bright, light lemon. Soft, with wheat and light biscuit. Lemon, unripe melon, gentle black pepper. Well-attenuated, chewy texture. Mild, mellow, classy.

On tap at the brewery. Pours a hazy yellow gold with small white head that lasts. The aroma is floral, yeast, funk, oak. Thin body, yeast, funk, wood, lemon zest, apple, nice tartness, enjoyed this.
