Allfort is our take on the historic style of Adambier. Much debate and mystery surrounds the style and those few modern interpretations, including this one, likely bear little resemblance to the original - like a memory of a memory. Still, there’s much to be inspired by in the reading of its history and the idea of a strong, malt-forward (but well-hopped) Northern German ale certainly pulled us in. Ours was made with a complex malt bill that included German and English base malts, Munich malt, and a variety of smoked and crystal malts. Fermented with our house Kölsch yeast, we lagered Allfort in one of our horizontal tanks before transferring to (in equal parts) Apple Brandy barrels, Bourbon barrels and stainless steel. After nine months those components were reunited. The unique combination of raisin/fig with smoked malt and barrel character makes for an absolute treat and quite unlike any beer we’ve made before.

Nice solid evening sipper.
Dark pour and a tan head.
Ok intensity in the aroma.
Decent sweetness and mellow carbonation level.
Dark malt, oak, fruity and some bourbon in the flavor

0,3 litre can, from a trade, at home. Dark brown with beige head. Smoked malts, barrel, yeast, apple brandy, chocolate, coffee.

Armsby draught, 12/30/24.
Dark with some deep chestnut-mahogany tints. Clear. Small, dark beige head.
Big, fruity cherry and bourbon with a mix of round and spicy apple brandy. Vanilla, chocolate, light oxidation...no alcohol noted.
Soft, malty, rich with big apple brandy and more moderate, spicy bourbon notes. A bit of chewiness to the texture, but quite high attenuation with no alcohol though maybe a touch of warming on the finish. Tons of chocolate, cherry and vanilla notes lingering with mild roast.
