Blended 2023 was blended in late 2023 and bottled in December. We always allow this beer a little longer in bottle before release as it needs it to round out the edges. The blend consists of a turbid-mashed (on 4/21/20) spontaneous beer aged in a Missouri oak foedre, our 2nd use of the PH1 barrel we let spontaneously ferment a heavy wheat malt bill on 1/18/22, a French Oak puncheon of a highly hopped Missouri Farmhouse Pale, and the final 8% of the blend was Belgian Lambic from a well known producer. We bottle conditioned this blend with Brettanomyces Bruxellensis and our House Side Project Brettanomyces to finalize this complex blend and beer.

375mL bottle, as pictured, drunk 11/7/25.
Bright, juicy, funky with tons and tons of complex Brett. Plentiful barnyard is endearing. Oaky, but not too much so, with nutty wheat and stronger lactic elements, but no acetic. Very clean (clean as in not muddled. Not clean as in lack of funk), clear, focused nose.
Nice and malty with round oak and an excellent balance of Brett and lacto, the former being stronger, yielding vibrant fruits and notes of slight horse blanket, old leather and slight medicine. Just tending slightly sour, but never too much so. No cringing finish or enamel stripping here. Oak is round and Brett is vivaciously fruity.
It's weird to me that SP can quite readily make these really amazing lambic-like sours, and yet still chooses to make a bunch of enamel-stripping mega-acidic, sometimes acetic-bomb sours. This right here is better than at least half of the lambic producers in Belgium. They should really lean in to this.

Bottle, courtesy of Ryan. Pours deep gold. Funk, minerally, plum, tangerine, lemon juice, grapefruit peel, umeboshi, minerally, pickle juice, pear. Nice spritz. Excellent.
