With the spirit of the North and our own deeply founded habitation, we offer to you this Song of Winter: a rich Chocolate Stout brewed with an abundant addition of fresh cacao nibs sourced and roasted by Colombia’s Tibito Chocolate and imported by Maine’s In situ Food Co. In Situ’s ideology and vision stand apart from the typical Western Economic Ethos: shifting from a model of extraction of raw resources to one of adding value within countries of origin, empowering communities to build wealth, and protecting their environment.

Pours a dark, brown-black, with smallish tan head. Aroma is dark chocolate, roasted grain, coffee, leather. Flavors follow, with a touch of vanilla. Mouthfeel seems a touch thin.

750mL growler filled 2/7/23, drunk 2/17/23. Dark. Large, dark beige head, well-retained. Char and vanilla with heavy cacao-like stout elements. Lots of cacao, very tootsie roll-like. Easygoing with a good mix of dark chocolate, vanilla and roast. Clean. Soft and malty, clean and chocolatey with lots of varied dark, milk and fudgey, cacao-like notes. Vanilla not overdone with lots of bitter roast and traditional stout notes. Easygoing, medium body with high attenuation and no flaw or alcohol.
