We often create beers with intensely concentrated flavor from a refermentation on whole fruit. In certain situations, with certain fruits, what remains aterwards is an abundance of uniquely flavorful character. With Rubis, we look to showcase what a second use of that fruit has to offer. For this batch, a simple and elegant foeder aged farmhouse ale was transferred onto “spent” cherries and raspberries lending a delicate and well-integrated fruit expression to a spritzy and refreshing beer.

On tap @Grand Delancy. First foray into Fox Farm after I asked the bartender what he recommended. Hazy orange, Lipton sun tea pour, light froth. Sour cherry skin, raspberry acidity, light to moderate foot cheese funk on the nose. Taste is sour cherry skin, apricot sour with heavy tea astringency & a sudsy, strong mineral finish. Great.

Draught at Tørst: pours orange with white head. Aroma is cherry, some funk. Slight tartness, expressive cherry. Dry finish. Quite nice.

750mL bottled Apr 2023, batch 1, drunk 10/8/23. Clear light raspberry-rosé. Pink head sits at cover. Mellow as hell, with no aggressive acidity. Heavily mineral and big raspberry essence. The second use fruit really takes the sharp acidity out of the raspberry. Soft, good malt character, quite dry with tasty raspberry and juicy cherry. Low sweetness from the fruit as well. Mineral, Brett and fruit with mild flavors and wonderful balance.
