String Theory uses a very special version of our farmhouse mixed culture, white wheat, and strata hops to bring you elegant layers of complexity with a balanced acidity in a can. It is extremely drinkable with zero residual sugars and very low carbs. String Theory pours a light straw yellow releasing notes of bright hay, lemon zest, sour dough bread, grass, floral citrus, and Anjou pear. The finish is crisp and dry with a beautiful balanced acidity and lingering minerality making it the perfect companion for a night with friends, day hikes, the craft-curious drinker, and wine drinkers alike.

Can to tulip.
Appearance: soft orange to yellow haziness with a finger's worth of white foamy head which trailed off nicely to leave some light lace
Aroma: white pepper, lemon zest, and floral hop tones, light straw and a little bit of vinous notes; light bready malt down in the backbone
Flavor: blends the prior noted aromas to a fine sweet & semi-spicy fresh vibe; finishes semi-spicy, slightly lemon zesty and a little bit of malts
Texture: light to medium bodied; slightly sessionable; some smoothness but also a little bit of the spice and zest nicking the tongue ever so slightly
Overall: I say a pretty nicely done saison well worth coming back to.

Tap at BeerTemple. It’s got an intense, strange acidity throughout, not much else. Lacks structure both in malt character and body, quite underwhelming.

Light, a bit sweet, tart. Citrusy and floral, some white wine or sparkling wine vibes, low acidity. Somewhere between a belgian and a US sour saison, crushable and refreshing. Very nice.
