City of Trees builds on the recipe from our last West Coast IPA, The Eighth Chamber. In The Eighth Chamber we utilised Centennial hops, known for shining bright when used on the hotter side of brewing. In City of Trees we’ve selected Idaho 7 and Amarillo, both also known for bigging themselves up when used on the hotter side.

Added throughout the boil, whirlpool and fermentation, their oils have oozed into a slick base of extra pale and cara malt to create a tacky gum of freshly squeezed pink grapefruit juice, spruce tips, tangerine and lemon all with the classic bitterness and pine we know and love in a West Coast IPA.

Keg at Mad Squirrel, St Albans, Herts. A hazy golden/orange coloured pour with a medium white head on top. Hoppy, citrus, orange, pine, tropical fruit taste and aroma.

Panda 🐼 at home thanks to Colin. A light hazed golden orange coloured pour with a small white head. Aroma is semi sweet, orange, midget gems, peach, Flavour is composed, semi sweet, midget gems, peach, spicy citrus, juicy, peach melba, woody notes. Palate is semi sweet, moderate carbonation. Ok,.

Can @ The Social Beer Shop, CPH. Pours hazy Golden with a White head. Grapefruit, tropical fruit and grains. Smooth and full bodied. Short dry bitter finish.

Can at home, from an online peddler, 23/10/21. Clear golden orange with a decent white head. Nose is orange zest, grapefruit, melon, light floral notes, lemon rind. Taste comprises orange peel, grapefruit, pine needle, grass, airy malts, melon. Medium bodied, fine carbonation, semi drying close spiked with grassy come juicy hop bitterness. Decent crisp and clean IPA ... ticks off the WC box well.

Tap@Taphouse, Copenhagen - clear golden pour with a tiny white head. Solid west coast action here, lots of bitter resinous hops giving off lots of pine needles, grapefruit, some citrus peel, medium body, bitter sticky resinous hoppy finish, nice.
