Native/Wild: Estate Honey is a spontaneously-fermented farmhouse ale brewed with Maine grains, aged hops, and well water with estate wildflower honey added in our coolship. After fermentation and aging in oak barrels, this beer is naturally conditioned in the bottle with additional estate honey and aged in our cellars. In 2018 we were invited to “The Night of Great Thirst” in Belgium to showcase Native/Wild alongside the world’s foremost Lambic producers. During this time we had a chance to sample Drie Fonteinein’s honey lambic, Honing, which largely inspired this beer. We have used the honey from our hives in Newcastle in a variety of our beers before and this is our first time incorporating it into our spontaneous farmhouse ale, Native Wild. Gold in color with notes of stone fruit, ripe pear, orange blossom, and gentle oak with a bright acidity and a dry, mineral finish.

Bottle from my parents: clear gold with a fizzy head. Aroma is bretty, funky, basement, slight honey. Taste is somewhat tart, dry, funky. Honey is very mild subdued.

[10/23/2021] Sample at Mikkeller Beer Celebration Copenhagen 2021. Red session. Clear golden. Funk, oak, sour, juicy, fruity. Great.

Draught @ MBCC, 2021. Pours clear yellow with a small white head. Gagebind, medicine and plastic. Brett perhaps. Odd.

ABV: 7.0%. Clear medium yellow colour with a small to average, fizzy, fair lacing, mostly lasting, off-white head. Aroma is moderate malty, pale malt, wheat - grain, yeast, plastic, medicine, band-aid. Flavor is moderate sweet with a average duration, sour, tart, fruit - pear, plastic, medicine, band-aid, sweet wheat - grain, malt - sweet yeast - sweet fruit. Body is medium, texture is oily to watery, carbonation is soft. [20211023]
