Native/Wild: Estate Honey is a spontaneously-fermented farmhouse ale brewed with Maine grains, aged hops, and well water with estate wildflower honey added in our coolship. After fermentation and aging in oak barrels, this beer is naturally conditioned in the bottle with additional estate honey and aged in our cellars. In 2018 we were invited to “The Night of Great Thirst” in Belgium to showcase Native/Wild alongside the world’s foremost Lambic producers. During this time we had a chance to sample Drie Fonteinein’s honey lambic, Honing, which largely inspired this beer. We have used the honey from our hives in Newcastle in a variety of our beers before and this is our first time incorporating it into our spontaneous farmhouse ale, Native Wild. Gold in color with notes of stone fruit, ripe pear, orange blossom, and gentle oak with a bright acidity and a dry, mineral finish.

750ml bottle served in a lambic basket at the Wash Ave location. Pours a hazy gold, cloudy white head. Nice nose, butter, neutral oak, green grapes, lemon rind. Flavor is good, lemony, some grain, wheat chaff, buttery oak, honey resonates as flower pollen. Earthy on the end. Nicely balanced. Tart, dry finish. Well made. 9 4 9 4 16
