Our first bottling of our Solera Sour Wild Project this year (2023).
We got hold of some beautiful German Riesling grapes which we put into carbonic maceration, a process that is common in winemaking. The aim of this process is to produce fresh, fruit-forward, low-tannin wines. Carbonic maceration uses whole clusters of grapes in a sealed, carbon dioxide-filled tank to start fermentation within each grape.
After this, we added our matured wild ale to the fermented grapes to create the perfect synergy.
