A wonderful collaboration with Xavier and his gang, Intervalle is a blend of mixed-ferm Saisons coming from the foeders and barrels of l'Apaisée. It was infused with juniper branches that we foraged ourselves on the mountains surrounding Annecy.
It is a complex and powerful beer, shining a light on the earth and herbal aromatics of juniper and the rustic sourness of l'Apaisée cellars.

Bottle, directly from Le Soupir. Color: Lightly hazy golden, white head. Aroma: Funky, floral, subtle fruity and herbal. Taste: Funky, floral and spicy juniper, fruity citrus, apple and unripe apricot. Earthy notes. Moderate tart, very light bitterness. Just below medium body, just below average carbonation. Long lasting fruity and dry finish. Nice, complex, refreshing and unusual.
