Little White Lights is our American millet pilsner brewed with a blend of pilsner malt, millet and corn grits. We hopped Little White Lights with Perle and Lorien in the kettle then fermented it cold with our house lager strain. Spunded for natural carbonation.

Canned 7/1/25, drunk 10/15/25.
Clear (though also pouring in the sediment at the end). Light tangerine-lemon-golden. Massive, white head. Good retention.
Sweet corn with floral hops and a touch of freshly cut grass. Perfumey pepper mixing with rustic grains. Clean and brightly aromatic.
Rich maltiness with a sweetness coming from at least the corn. Interesting, varied, complex grain notes with gently bitter hops and excellent malt depth and attenuation. Clean and balanced with above-average bitterness. Floral notes, lemon and rustic grains lingering. Quenching and highly flavorful, especially for its size.

16oz can from Tavour. Cloudy golden pour, fluffy white head settles quickly, some sediment. Bready aroma, grassy. Taste is grainy, hay with a smidge of bitterness. Quick finish, mildly dry.

On tap at Bizarre, pours a clear golden with a medium white head. Aroma has gentle corn, straw, and soft biscuity malt. Flavour is clean, with light corn, biscuity malt, and straw. Clean and drinkable but not exciting.

Can from Tavour. Pours very pale gold with a moderate white head. Aroma is rather Noble with something like rice. Near med body. Flavor is grass/spice with some light melon. Somehow it seems like rice is involved. Quite dry and nicely bitter.
