Of all the beers in our Proprietor’s Vintage Series, Parabola is the most notorious. It is always a beast of a beer, with intense flavors of black cherry, dark chocolate, vanilla and roast coffee-- yet each annual release also bears its own subtle imprint. We took the extra step of aging the beer entirely in 12-year-old bourbon barrels for this latest edition. These older-stock barrels accentuated Parabola’s signature richness with vintage-specific notes of stone fruit, fudge, and tobacco.

Bottle from the brewery. Pours dark brn/blk with a slight/transient creamy dark tan head. Aroma of wood, burnt malt, dark fruit, bourbon, vanilla. Very full bodied. Flavor is chewy, fudgy chocolate, bourbon, toasted/burnt malt, dark cherries, leather/tobacco. Not dry. Nearly sticky. Yet heat and burnt malt render it quite bitter. Extremely tasty ale.

Sample at Shelter pours an oily, leggy black with a ring of beige head. Nose has booze and roast and toast and caramel. Smells high end. Bourbon is nice and blends well with the base, roast and chocolate and molasses. Big Kentucky hug on the end, full bodied.
