The Great Earth Beneath Our Feet is co-fermented in stainless steel with an American saison yeast and a unique variant of Brettanomyces Bruxellensis (wild yeast) for a bone dry beer with prominent impressions of white wine, pineapple, fresh hay and mulled lime zest. A huge portion of spelt malt in the mash, as well as glycerol produced during fermentation provides a lovely soft, somewhat full mouthfeel despite being such a dry beer. A large whirlpool and dry hop addition of New Zealand Wai-iti provides even more depth and lime character to the flavor & aroma profile. Bottle Conditioned. Bottled August 2021.

Bottle. Pours clear straw, medium white head, good lacing. Aaron's is field grass, hay, funk lemon. Flavor follows. Hint of tartness, basement musty funk. High carbonation. Light body. Pretty tasty.

Bottle from Tavour. Pours a bit translucent with a very good creamy white head. Aroma is Brett with white berries. Med body. It's quite dry. Flavor is Brett with white berries and some citrus, light pepper, and arguably grass. Brett is moderate, but very tasty.
