Mixed-fermentation saison with Missouri Wildflower honey and Brettanomyces.
By & By Blend 1 is a new blend of barrel fermented beers that was conditioned/refermented on honey and a house blend of brettanomyces before being package conditioned in green glass bottles and kegs. Aged in oak for a range of 19-26 months. Drinking this beer reminds me of amphora aged Ski Soda, that time you spilled honey on your collection of lime Skittles, and that first time I heard Sung Tongs by Animal Collective in 2004

Medium yellow, and hazy. Thin head. The aroma has a woody, bretty aroma. On the palate, the bretty is maybe less refined, but still prominent. There's a slight floral accent to it, lemony, but it's dry in the finish.

750ml (thx, Brent L.!) @ Salesforce. Appearance: hazy golden with a white head. Aroma: funky, some acidity and oak. Taste: along the same lines, a bit on the acidic side, but not as bad as some others from StL. Overall: fine.

Poured from 750mL bottle. Lightly hazed gold with small white head. A bit acetic, mild honey notes and saison yeast. Typical Perennial sour. Too acetic for the price.

750mL bottle, pours a clear golden with a small white head. Aroma has plenty of wild yeast, fermented out honey, and a touch of oak. Flavour is complex, with lots of wild yeast, fermented out honey, light tartness, gentle acidity, and oak. Cohesive, complex, and buggy. Excellent.

Flaska från trade, b1. Lätt disig gul-guldig med vit krona. Något större, mycket citrus, lätt omogna satsumas, citronskal, en gnutta brett, fat. En släng av filmjölk. Både något stramare och stökigare än den snyggare Merna.

Couleur pâle, col fin blanc crémeux.
Arôme est plaisant, finement organique avec ce bouquet mielleux délicat - fleuri avec un léger rétro de funk/bretts - pointe de boisé.
Palais présente une excellent base dee funk oscillant presque sur le lambic - à cela vient s'ajouter un léger caractère fruité, fleurs sauvages, petite note de chêne et une petite pointe douce organique de miel.
