Bourbon Barrel-aged Maple Pecan Imperial Stout
This @topplingbrews collaboration was brewed and barreled into a combination of Heaven Hill and Old Fitzgerald casks in February 2023. After 18 months of aging, this liquid boasts a bold barrel presence and a silky, viscous body.
We’re delighted to combine the maple expertise of our collaborators with our own pecan processing prowess, where we roast small batches of fresh Georgia pecans and immediately add them to the recirculating liquid to capture every atom of their rich, nutty flavor and aroma.
As the air turns crisp and the leaves begin to fall, "New Leaf" invites you to savor the transition of the seasons with each sip. Let the liquid warm in your glass to experience the full depth of the roasted pecans as they layer with oaky barrel vanillin and a sparkle of maple in a finish that lingers like the last rays of summer sun.

500mL bottle. Pours black with tan head. Aroma has bourbon, maple, burnt sugar, charred wood. Flavour has a ton of bourbon barrel up front, burnt maple syrup, charred wood. Burnt, sugary, tons of bourbon; this is fantastic.

Dark brown. No head. Lots of rich cocoa, nice bourbon. On the palate, it's got a bit of maple, with some pecan in there. Sticky, the nuts show through a bit, and then it brings some bourbon. The bourbon is pretty burly, and the adjuncts are more mellow. The base is good, but not super complex. Solid effort.

16.9 oz. bottle, pours jet black with a small dark brown head. Aroma has lots of toasted pecans, a touch of maple, sticky dark sugars, and bourbon barrels. Flavour is wonderfully rich, with lots of rich dark sugars, maple, toasted pecans, molasses, and bourbon. The nuts succeed in drying this out a bit and soaking up the sugars, allowing the maple and dark sugars to dominate along with the bourbon. Wonderful.

Roast and coffee. Some pecan, light maple. Bourbon fairly well integrated. Black pour with decent head and lacing. Bittersweet end with some caramel. Oily consistency. Tap at Churchkey.
