Our founder, David, spent over 15 years making whisky, and when Spey Valley Brewery began, he would make whisky all day, and beer all night (or vice versa).

Stillman’s IPA is well-balanced, with a great hoppy aroma and punchy bitterness, balanced against a beautifully sweet, malty background. A great all-rounder beer, with light spices and floral notes, that’s not too strong and is just the trick on a hot sunny day.

Malts: Maris Otter, Wheat, Crystal.
Hops: Northern Brewer, Rakau, Cascade, Delta.

500ml bottle. Minimally cloudy, orangey, deep golden colour with small, frothy, half-way lasting, minimally lacing, white head. Herbal, grassy, hoppy aroma, minimally biscuity, malty basis. Taste is monotonously bitter hoppy, mildly grassy-herbal, minimally sour-ish, hints of dandelion; soft carbonation. Rather boring.

Dark golden beer with a bittersweet aroma. Flavour is slightly grapefruit-y with the hops and malt coming through more in the finish. Dry, crisp and very drinkable.

Bright dark amber colour is really attractive. Aroma has a lot of toasty hops. Thin, descended into a crackery, toasty character but also some bacteria / over tine this will show itself more. Problematic diacetyl.

Bottle at home. It pours clear amber with a medium beige head. The nose is wood, toast, leather, brown bread, candy and grain. The taste is smooth, caramel, wood, light toast, spice and some citrus peel with a dry finish. Medium body and fine carbonation. Very ho hum. Malt driven beer with not much going on.
