It often takes a truly amazing event to create something new. In science, for example, it takes a Supernova to create the heavier chemical elements. In the Funk Lab, our team of brewers decided to use Brettanomyces yeast as a catalyst for creating our "Uncommon Element Brett Pale Ale". A light malt base and the abundance of Hallartau Blanc and Mosaic hops, combined with the Brett Drie, give this beer a beautiful flavour and aroma of tropical and stone fruits, with a funk backbone. This beer may be uncommon, but we hope not for long!

Cloudy yellow pour, with a large white head. Aroma is incredibly fruity. Lots of tropical fruit, solid, but yet soft lactic tartness, and some stone fruit. Hints of yeast, some light cereals, low to medium bitterness, low tartness, crisp, grassy, slightly fruity finish.

Hazy yellow color with a medium white head that burns away steadily to a film. Strings of lace. Aroma of yeast, hops and malt. Light-bodied with flavors of mildly funky yeast, grassy hops, citrus and malt. The finish is slightly funky with a citrus and hop aftertaste. Above average overall.

A hazed blonde ale with a thick frothy lacing white head. In aroma, sweet fruity malt with loads of citrusy floral hops, Brett, light lactic notes, very nice. In mouth, an Orvalesque ale with loads of Brett, fruity esters, light lactic notes, very nice and balanced, yet complex. Bottle from LCBO, a year old.

Bottle. Cloudy yellow, airy white head. Aroma has brett, citrus, a little horse. Bretty, citrusy flavour. Mild yeasty roughness, a little sweetness. Finishes dry. Fine, creamy carbonation.

Bottle 375ml. [ As Nickel Brook Uncommon Element Brett Pale Ale ].ABV: 5.2%. Light unclear medium yellow colour with a large, frothy, good lacing, mostly lasting, white head. Aroma is moderate malty, pale malt, moderate hoppy, citrus, fruity hops, leather - brett, funky. Flavor is moderate sweet with a long duration, sweet fruit - candy - yeast, citrus, leather - brett. Bottle @ fonefan tasting. Nice head with good duration. Color is golden. Aroma and taste are brett, citrus, flowers, hops, malt and flowers. Nice bretty finish.

375 ml bottle into tulip glass, no bottle dating. Pours lightly hazy/cloudy pale golden yellow color with a 2 finger fairly dense and fluffy white head with great retention, that reduces to a nice cap that lingers. Nice dense foamy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Aromas of lightly tart lemon, lime, orange, peach, pear, pineapple, passion fruit, melon, red apple, white grape, citrus peel/rind, peppercorn, hay, straw, herbal, floral, grass, cracker, white bread, light musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/spicy/funky yeast, citrus/tropical hops, and light-moderate pale malt notes; with good strength. Taste of lightly tart lemon, lime, orange, peach, pear, pineapple, passion fruit, melon, red apple, white grape, citrus peel/rind, peppercorn, hay, straw, herbal, floral, grass, cracker, white bread, light musty funk, and yeast earthiness. Moderate peppery yeast spiciness, herbal/grassy/citrus peel bitterness; and light Brett tartness on the finish. Lingering notes of lemon, lime, orange, peach, pear, pineapple, passion fruit, melon, red apple, white grape, citrus peel/rind, peppercorn, hay, straw, herbal, floral, grass, cracker, white bread, light musty funk, and yeast earthiness on the finish for a good bit. Great complexity, robustness, and balance of fruity/spicy/funky yeast, citrus/tropical hops, and light-moderate pale malt flavors; with a great malt/bitter/spicess balance; and zero astringent flavors after the finish. Moderate increasing dryness from bitter/spiciness and carbonation. High carbonation and light-medium body; with a very smooth, moderately crisp, grainy/sticky, and lightly resinous/acidic balanced mouthfeel that is great. Zero warming alcohol as expected of 5.2%. Overall this is an excellent Belgian pale ale. All around great complexity, robustness, and balance of fruity/spicy/funky yeast, citrus/tropical hops, and light-moderate pale malt flavors; very smooth, crisp, and refreshing to drink with the moderately bitter/spicy/drying finish. Not sure how old this is, but I can tell it has had some time on it. Really great well rounded Brett complexity, balanced Mosaic/Hallertau Blanc hops, and a solid pale malt backbone. A very enjoyable offering, and well executed 100% Brett beer.
