The hardest part about making new and exciting hoppy beers is sourcing the hops you need. Most hops are bought under contracts which are signed two or three years in advance. We occasionally get opportunities to acquire small quantities of specialty hops that are enough for one batch of beer, but no more. This beer allows us to feature hops that we would otherwise not be able to make use of. This second edition features Sorachi Ace and Wakatu hops.

Cask at Deep Ellum, early Summer 2014
Wasn’t giving up on this one, despite how much I disliked the first incarnation. Thankfully, this one proved much better. Overall, I appreciate that they are really focusing on the hops, by putting them in an very light lager, but I just find the base beer to be so lacking and especially, I don’t think the cask was the right vessel for this. The already light/watery nature of the beer is exacerbated here and it tastes like hop water. Granted, on account of these hops being much less heavy-handed with the alpha acids, it’s not fatiguing and resinous, but still a bit too unbalanced for me. Lemon, herbs, light vanilla/honey sweetness from the malt and a bit of bready/doughiness. Crisp, certainly, as far as the hop finish, with a good amount of bitterness still. Medium-light body, watery texture. Quite soft.

Bottle from Drum Hill Liquors The hops used portion of the label has nothing written on it so I assume it is this version. Pours a slightly hazy light straw color with a huge frothy bone white head that persists forever. Aromas of floral earthy pine and resin with just a hint of bready malt deep underneath. Pine earthy resinous hop flavor with moderate bitterness. Faint bready maltiness. Medium to light body with a moderate level of carbonation. Very nice brew! I am so ready for you to distribute to NH!
