The Mimic is a Quick Turn Mixed Fermentation beer, fermented in stainless steel tanks for 4 months. Our use of the traditional Turbid Mashing process lends to full texture and flavour, while having a very low alcohol content. It is fermented with a special blend of Saccharomyces, Brettanomyces, Lactobacillus, and Pediococcus. This unique blend of organisms gives bright citrus and tropical fruit flavours and aromas, balanced by a round texture and medium acidity.

Pale, bright, medium head. White wine accent, very light bugs, nice brett, a touch of acidity. Bright, juicy, kiwi, the gentle carbonation carries the flavour well.

On tap at Blind Enthusiasm, pours a clear blonde with a small white head. Aroma has a lot of lacto, crackery malt, THP, and a touch of spiciness. Flavour has light THP, some sweet cereal grains, and a touch of lacto. Not very complex and a bit flawed, but reasonably brewed for what it is.

On tap at the brewery. Pours clear pale blonde with a white head. Bright tropical fruit, lemon citrus, and some gentle funk on the nose. Flavour has gentle tropical fruit, some citric acid, and some cheerios. Not great

A lightly hazed blonde ale with a thin lacing white head. In aroma, sweet fruity malt with light Epsom salts, light lemon, light Brett, very nice. In mouth, a nice sweet fruity biscuit malt with light grassy hops, light mineral notes, light Brett, very nice. On tap at The Monolith.

Clearish yellow with no head. Soft funky nose. Light tart and dry notes. Touch of citrus and melon.
