Draught at CBC, 5/17/16.
Rich buttercup golden body shows a light to moderately-light haziness, with a small, but firm white head atop.
Brett and lactic acids are aromatic but easygoing, as soft wood notes creep in behind. Some remnants of honey-soaked baguette leave an impression and create a vessel for the acids to work on. Dry hops are done very nicely and homogenize with the brett esters as very light lime, mango and guava maintain brightness. No alcohol or flaw.
Brisk, tight carbonation combines with a malty but well-attenuated texture, replete with soft wood tannin to add perfect structure for the moderate acidity to play about on. Lime, guava, soft, farm funk and reserved lactic notes are all bright and tart-to-sour but never too much so. Light hop bitterness and small amounts of juiciness further add flavorful appeal while the finish is tart, crisp and well-balanced with honey-like malt sugars still remaining in small quantity. An incredibly well-balanced sour with no one flavor dominating and no alcohol or flaws.
