Draught at Trillium Field Trip, 8/4/18.
Dark mahogany, unclear. Tan head fades steadily to a ring.
Mushy-sweet nuts, bread, wood and specialty malts drying things somewhat yet sweetening up again via white chocolate-like character. Almost pecan meal-like with a good mix of nutty, savory character and very light roast. Not sharp or alcoholic, but like the base beer, it feels like the wood is the only thing drying/balancing this. To that end, the pecan does help, but gives it a more bready, nutty, odd character.
In the mouth, it shows strong pecan and wood with more bready specialty malt, wood tannin and heavy wood flavor. Growing astringent, yet still somehow sweet alongside it. Like the base beer, there's just no malt depth or much in the way of interesting flavor. A mouth full of wood, white chocolate and bready specialty malt. Very little in the way of fruitiness, dark chocolate, roast, etc...It's a unique take and I applaud the effort, but this beer definitely doesn't have the balance, complexity or even texture I'm looking for in an Imperial Stout. Some light heat grows on the end, probably exacerbated by the strong, drying wood character. Lingering nuttiness is rather unintegrated. Low, fairly engaging carbonation.

5 oz. draft @ Field Trip 2018. Never had the base "Color & Grain" so I have no reference point. Mild nobody knew wants to stay out. Body and texture are good. But after the three styles we had prior to this this feels a little lacking. Hard to be fair to this after the monster stouts we just sampled.
