Bottle at the brewery, 5/25/18.
Lightly hazy, blonde-to-light-copper. Butter-tinted, white head fades steadily to a ring.
Acetic acid and oak add a big richness right away with vanilla and cereal-like grains behind it for support/balance. Lightly fruity Brett and lactic acidity lighten the load of the acetic acid as soft funk, hay, earth and slight lemon-like acidity gracefully enter the mix.
In the mouth it's soft and malty, showing tight carbonation and big oak notes with, fortunately, low/no toast. Lots of honey and vanilla character at every turn helping to keep the acetic acid in check. Thus the acid adds richness and depth but not overdone sourness. Big wood tannin adds significantly to the mouthfeel with great attenuation. Classic Oxbow, though a touch more malt and oak than usual.
There was no horseradish/mustard in my bottle....
