While much of our work in the realm of spontaneous beer production employs ingredients and processes that follow a Belgian tradition, we’re also interested in exploring the versatility and approachability of spontaneous fermentation outside that lens. Inspired by the ancient farmhouse style of Finnish Sahti, Satu marks our biggest step in a decidedly different direction. Starting with a grist of local unmalted wheat, pilsner, Munich and rye malt and hopped with whole leaf aged hops, Satu sees coolship additions of spruce tips, juniper (needles and berries), citrus and ginger. Aged two years in a combination of gin barrels and neutral French oak casks.

750mL bottled Nov 19, 2021, drunk 6/7/22. Clear, tan-maple with strong ruddy hues throughout. Dark beige head atop shows moderate retention. Beautiful mix of malt, juniper and wild yeast/bacteria in the nose. Light red fruits, earth, mineral, lactic acid and plentiful, but not dominant juniper and spruce. Malts add gentle honey and graham cracker in balancing support. No alcohol, flaw, adjunct excess or punchy acidity. Soft and malty, well-attenuated with red fruits, lactic acidity and moderate juniper and spruce. Ginger is just a light afterthought and there's no excessive acidity or juniper. Honey, toast, various bread notes from the malt and an earthiness in general. Lingering tart acidity but still even and in balance. Definitely an innovative and very successful take on a sahti. Preserves the integral elements without going overboard on them.
