750mL bottle drunk 5/13/22. Mostly clear, pale, honey-lemon with a small, white head, low retention. Lactic and very mild Brett with honey and citric acid. Sweet, thick, sluggish with heavy honey and strong lemon on the end. I'd say this is just way too young, with massive adjunct dominance, but I think it's also just way under attenuated and not going to dry out enough over time. Just a sweet, adjunct mess.
Draught at the new taproom, 12/20/25, as pictured.
Pineapple, Brett and lemony goodness. Still some lemon cake icing.
It's still sweet, perhaps not too much, but certainly has come a long way in 3.5 years. Drying tannin and bitterness on the finish helps a great deal. This is much, much better with the 3.5 years age on it, but still not exemplary. And it shouldn't need 3.5 years...Will just leave the original score as is.
