50cl bottle pours a mostly clear gold, cap of white head. Nose has grass, some brett, honey, hops, ginger. Flavor has both a grainy and yeasty character, straw, potpourri, light ginger, light honey. Finishes dry, spritzy.

500mL bottled Dec 2021, drunk 4/17/22. Clear brass. Large, well-retained, white head. Big brett notes vastly outdo any hoppiness, but there is an afterthought of pine and grapefruit, and thankfully it doesn't clash. Soft, well-aged, lactic acids produce an enjoyable tartness, as sparse cracker malts bring balance gently. No alcohol, flaw. Soft and matly, well-attenuated with an almost chewy texture. Lactic acid seems restrained but adds good tartness. Lightly hoppy with grapefruit and orange undertones. Strong brett brightness with biscuit and dough lingering alongside lemon and white bread. Just a solid, even, mild, well-aged, true sour. Yum. Nice to see Wunderkammer has found their space. Always enjoyed their stuff that was brewed at Hill and happy to keep buying whatever I see from their own space.
