This jewel of a wild, golden beer sparkles and gleams. We brew it with Vienna malt, Carapils, flaked wheat, two-row barley blend, and hop with Tettnang. Like any precious stone, Bijoux takes time to coalesce. After brewing, the beer goes into oak barrels where it ages for eighteen months before we add a blend of Turkish and Mission figs and let the beer rest for another four months. After aging, Bijoux displays an aroma of tart fruit and a flavor that conjures up peaches, figs, apricots, and a hint of pie crust.

On tap at Uno Chicago Grill in Hamilton, NJ. Tawny amber gold pour. No head. Sour fruit aroma. Flavor is tangy yeast malt. Notes of white grape, dark fruit, oak and earthy funk. Smooth and drinkable.

Draught at Tip Taproom 11/15/21. Mostly clear, amber-to-iced-tea. Small, white ring of bubbles. Almost a concord grape-like character initially. Strawberry and raspberry in there, as well. Love all the fruit from just figs and yeast/bacteria. Not boozy or acetic, with a solid lactic acidity. Very lactic in the mouth with a cheese rind astringency on the finish. Earthy and very bready. A good maltiness but man, that astringency on the end is tough. I guess at 9.4% there's some alcohol talking too. Not sure why this needs to be 9.4%....would be great to get more fig and fruity yeast and less alcohol and astringent bitterness.
