The Exquisite is our spontaneously fermented golden ale aged in apple brandy barrels. This first edition was brewed in March 2018 and spontaneously fermented ion a single NJ charred oak apple brandy barrel where it aged and was regularly topped up for 26 months before a natural refermentation in this bottle.

Bottle, 330 ml trade with nimbleprop. Shared with Max, Zec and Miro B at my 10k tasting. Hazy yellow orange with small white head. Funky, barnyard, stone fruit, bit citric, medium sourness. Juicy. Maybe lacking some depth, but still very good.

375mL bottled May 2020, drunk 10/30/21. Clear, copper-brass with a hint of amber. White head immediately fizzles to small ring. Oak-accented Brett with big apple and pear overtones and a deeper peach/strawberry fruitiness. Exceedingly fruity. Some musty cellar funk, cidery and with good minerality. Not too big on the acidity, seemingly, with prevalent lactic and very light acetic notes. No booze or flaw. Heavily tannic in the mouth, surprisingly so. I wonder if that is the char? It's definitely a bitterness not a sourness from bacteria. But it's not problematic and works nicely with the hint of honey from the malt, round, full texture and tight carbonation. I don't think I'd be able to guess apple brandy, but there's definitely a liquor-like character on the end, which does resemble apple tannin. Quite dry. Enjoyable, for sure, if a bit stiff. Not even hot or boozy, just tannic, liquor-like and strong for lack of a better term. Lingering cider, interesting malt and apple tannin.

375ml bottle pours a dark orange, hazy, no head, plenty of carb. Nose is nice, rings very true, lemon rind, medicine cabinet, some horsey funk, neutral oak. The brandy is there, cognac too. Flavor is very authentic, lemon and orange and grapefruit but all rind... no juice. Buttery oak follows, natural wine, brandy, grappa. Finishes long, medium acid and dry on the lips and teeth. Very well done. 8 3 8 5 15
