This beer was brewed at our small, rural brewhouse in a wood-fired copper kettle and chilled overnight in a coolship. The wort was moved to our aging cave and fermented with mixed culture in stainless, moved to oak and bottle conditioned.
brewed in Feb.21, bottled Sept.21. Awesome Fischer cat art provided by my friend @paramedcomics! It’s an amber ale with mixed culture, this is a great winter beer. It uses some German crystal kiln malts over a base of Vermont barley and rye. When these darker malts dry out, you get a tart and toasty holiday cake with candied ginger pear and spice.

Bottle at Farmhouse Grill, 8/12/22. Deep amber-cherry. Small, off-white head. Cherry pie, honey and caramel-like malts with moderate aceto-lactic acidity, light vanilla and tons of red fruit. Soft and malty with ample sweetness balancing moderate souring bacteria and fruity Brett. Lots of cherry, caramel, honey, light vinegar.
