Containing apples grown at Treehouse Farm & Fermentory, À Travers L’étang was aged in tawny port barrels with a pitch Brett Brux. This results in a highly complex cider with notes of red wine, crisp apples, and classic barnyard funk— Enjoy!

Bottle from my Secret Santa. Mojito glass @home. Pale & faintly suspended. Agitated pour, quick soda. Floral, yogurt, soft grape, iodine, wild cider with a slight vinegar punch. Pushy & very lovely. Sharp dessert apples. Thin, bolder floral, acidic jab, soft melon, savory cooked red wine, fat, menthol & lingering earthy finish. Prickly carbonation, dusty, zippy. It might benefit more from a bittersweet apple base. Fun.

375mL undated bottle (purchased May 2022), drunk 7/1/22. Clear, light blonde with no head. Very heavily fruity nose with hints of musty, tart brett but it's not dominant or intensely expressive. Similarly, the port barrel isn't dominant, but does contribute rich notes of honey, brown sugar and deep red grape acidity. A bit of oxidation and light strawberry-cranberry-brown sugar with rich apple on the finish. Similarly, it's lightly sweet, with deep, rich port tones, but hardly dominant, creating a layer of complexity that is well-intertwined with the heavily fruity, fleshy red apple flavor. Brett contributes light tartness, mild funk and feels a bit at odds with the port character, at first. But the more I drink, the more interesting the cider becomes. Definitely a thinker.
