Canned Winter 03, drunk 5/21/23. Clear, dark, large, dark beige head, strong retention. Brett and very minimal dark malt. Cracker, biscuit, mineral. Clean, no alcohol or flaw. Brett is gentle, nicely developed. Soft, malty, just a touch of dark malt adding toast, wood, sticks, very light cocoa. Incredible restraint on the dark malt. Excellent base malt depth, good attenuation. Brett is mild but flavorful and not too acidic or citrusy. Floral notes in control. Another lovely entry in this series.

Pours mahogany tinged cola into a willi. Mocha head with medium retention recedes to skim surface. Dark chocolate covered pit fruit and necco wafer aromas. Sharp with earthy dark chocolate and mildly tart pit fruit front to back. Dusty tree bark finish.

Pours a deep brown, with mid-sized tan head. Aroma is a touch sour, a touch spicy, has some leather, and a note of chocolate. Flavor is very saison-like, the kind of rusty well water note I associate with the style. There's some pepper, a bit of sourness, some leather, some chocolate. Mouthfeel is fairly crisp.
