In December 2022, our long-time friend and colleague Vasili Gletsos of Wunderkammer Biermanufaktur located in Albany, Vermont travelled to Connecticut with the intention of making a beer with us. Our vision was to create a beer that could be enjoyed next to the warmth of a fire during the depths of winter. A dark beer presenting layers of malt driven complexity. A Baltic Porter. This beer is dark as night and like the metaphor of the little owl, allows for a rare opportunity to spread your wings.

16 oz can shared by tfontana, thanks. Nose is smoke, chocolate, and rich malt. Flavor is earth malty, with a very faint chocolate nuance. Mouthfeel is light and pretty much on par with the style. Good malt depth with notes of dark fruit and toasted caramel.

Can (2/28/23) pour from Steve! It's an opaque black with finger-width beige head with good retention and trace lacing. Aroma is strong earthy roasted malt, toffee, lesser tobacco, leather, vanilla, minerals, vague tart quality. Taste follows aroma with toffee a bit more subdued. Mouthfeel is light-to-medium bodied with smooth, frothy texture, soft carbonation and finish as taste. Overall, good strength and decent complexity.

Canned 2/28/23, drunk 5/7/23. Dark, inky, but seemingly clear body with good viscosity. Medium-sized, darker tan head showing moderate retention. Nose is a wonderful mix of base malt and dark malt with an excellent dark fruit character and loads of tobacco, cherry, vanilla and rich, sumptuous toffee. Doesn't seem too sweet and it's not boozey at all. In the mouth it's rich, thick, viscous. But yet it's really well-attenuated and the base malts balance all of the dark character from the dark malts. Where their brewing style (rich, big-bodied beers) didn't seem to favor the two Zeal's I had, it certainly favors this style of beer and this is right up there with the rich, thick, uber-viscous BA Imperial Stouts I enjoy. The flavors are complex and elegant as well. Really impressed here.
