Andrea and Christian Stanley of Hadley, MA's Valley Malt have proven to be invaluable partners to us throughout the years. Sourcing high-quality grain from farmers in the Northeast, their work allows us to support local agriculture without compromising on quality. With the recent formation of the Northeast Grainshed, of which both Trillium and Valley Malt are founding partners, there's no better time than the present to revisit farmhouse-inspired recipes featuring their malt. These recipes call back to many of the beers we produced from 2013-2016 while incorporating the many lessons learned since.

Highlighting a grist bill consisting of nearly 100% Valley Malt, Valley Triticale Saison presents a warm golden color with a bone white, frothy head. The nose is greeted with familiar estery aromas of bubblegum, clove, and a touch of banana that rest upon nuanced notes of crackling grain. Finishing dry with a touch of floral bitterness, the Fort Point-brewed Valley Triticale Saison is lively, refreshing, and crisp.

Greenway draught, 4/14/23. Hazy, deep brass-bronze. Frothy white head quickly to spotty cover. Sweet and doughy nose. Maybe some light to moderate lactic character. Yellow fruits and thankfully no crude phenols. Bit of spicy, almost citrusy notes on end. Plentiful, rustic grains. Clean. Soft, sweet from ester, with chewy malt and lots of honey character. Big white pepper and orange peel notes with good attenuation and some moderate minerality on the finish. No lactic character, it turns out. This is well-done. There's nothing crude not is it overly bready or doughy in flavor. Nice and malty for its size with excellent carbonation and malt textures. Clean, no alcohol noted.

Pours hazy pale gold into a snifter. Bright white head with medium retention recedes to skim surface. Sweet yeast and earthy marshmallow aromas. Dry with sweet caramel and sour fruits upfront turning to a lasting yeast and sourdough finish.

On tap at the brewery. Pours a hazy gold with some creamy white head. Nose is soft, grassy, some mild yeasty esters, light clove, some mild pepper, a little honey. Flavor has lots of honey sweetness, light hay, some flower petal, light clove and bubblegum, a little orange. Clean, silky finish. Soft and drink able. Sort of a hybrid.
