My new love in the barrel-aging world is the characteristics we can pull from Cognac barrels. We have found a reliable source for high quality VSOP barrels and the results have been some of my favorites - especially when combined with a bourbon influence - either as a double barrel or in conjunction. Derivation #17 showcases this love and produces a beer in which we feel comfortable to release, one that not only tastes incredible now, but should gracefully age.
Derivation Blend #17 is a blend of Willett Bourbon and VSOP Cognac barrel aged O.W.K. and Vibes recipes which matured from 24 to 40 months in these barrels. The final blend was then finished on vanilla beans from Sri Lanka and Tanzania.
For years, we have treated our use of vanilla beans like IPA brewers treat their hops. Finding perfect blends, complementary pairings, and transformative expressions from different varietals and our uses for them. The vanilla is explosively aromatic, with a nutmeg/eggnog warmth and a deep, round, lasting bourbon complexity, D17 is lovely and I am glad you can enjoy it at home.

Rated at The Side Project Cellar. Heavy, sweetish and slightly roasty with some bourbon, cognac, vanilla, chocolate and cocoa nibs, vanilla beans. Quite a lot of vanilla here. Nice.

On tap at Side Project Cellar. Black with small tan head. Chocolate and bourbon, some cognac in the back, vanilla. Medium+ sweetness. Full bodied.
From backlog. Bottle, at a share in Brøttum. Black with little head. Roasted Malts, coffee, bourbon, barrell, vanilla, Smooth.

Boozy, a bit sweet, fairly thick. Bourbon, vanilla, spiciness from the cognac, a whiff of licorice and roast. Smooth, balanced, rich, fantastic.

Bottle. Poirs black witbh small tan head. The aroma is strong dark chocolate, molasses, bourbon, wood. Slick body, dark chocolate, vanilla, bourbon, nice sweetness, enjoyed this.

375 mL bottle at Cellar, 3/28/23. Dark. Burnt tan head to ring instantly. Vanilla is prominent. Chocolate and fudge, seems like it's going to be sweet. But it's so soft, rich and even. No booze even with extended breathing. Cognac isn't overly apparent in nose. Soft and grapey up front with big bourbon spice, mega vanilla and sweet, milk chocolatey malts. There's some interesting acidity and interesting cognac character oddly tied together by milk chocolatey stout. Odd, rather sweet. Willett is killer though. No overt booze but it does help add some dryness to the finish. Not hugely viscous but between vanilla and residual sugar, it's a bit much.
