Last year we introduced Allegro, a Saison-Inspired beer from our line of 100% spontaneously fermented beers, Music Vale Compositions. This second batch carries things forward in an elegant and refreshing way. With a grist and hop treatment reminiscent of classic Saisons, Allegro offers a base favoring an expressive yeast fermentation and the hop character to match. Aged 14-months in 750L oak casks, it’s a lively and satisfying example of the versatility and approachability of spontaneously fermented ales.

750mL bottled 2/25/2022, drunk 12/31/22. Had this thing on its side, but moved it to the fridge and left it for a couple weeks. Still gushed after opening cold, with the yeast slurry pushing up, oddly enough. So, not great. The first glass is still mostly not yeasty with awesomely bright citrus giving lime, lemon, stone fruit, mineral and just the brightest, tartest but not heavily acidic citrus notes. Soft vanilla and easygoing moist biscuit. No alcohol or flaw. Soft, juicy, malty and citrusy with light honey and cracker. Excellent champagne-like carbonation with brett and citrus on the finish and drying cracker and wheat-like malts. No alcohol or flaw. Juicy, soft, balanced, not sour and with really interesting citrus fruit character.
