Barrel-aged Lager with brett and bacteria, 4.9%
A year and a half after the release of the "clean" version, here is the wild barrel-aged part of the Pivo !
Our base of Czech-style PIlsner brewed at Spore spent more than a year in barrels with an addition of wild yeast and bacteria from Le Soupir barrels ;)
It gave birth to a funky beer with a nice acidity and a lot of complexity, blending the herbal bitterness of Saaz hops with the woody touch of the barrels and the expression of wild yeast.
A beautiful beer, closer to a Gueuze than a Pilsner in my opinion !

A hazy golden yellow beer with a white lacing. Aroma of brett, sour white grapes, wood. Taste of sour white grapes, oak barrel, pale malt. Good!

Bottle. Color: Lightly hazy golden, white head. Aroma: Malt and hop, bread, fruity hints of apple and stone fruit. Taste: Mix of wood, floral / herbal hop, subtle fruity notes (citrus, unripe stone fruit), rural funk, yeasty hints. Dry-ish, bittery finish. Well balanced. Moderate tart, light bitterness going to moderate at the finish. Medium body, just below average carbonation.
