Waves is a blue plum cider barrel aged on De Chaunac lees, blended with a young cherry cider. The youthful portion has tamed the acid, while wach fruit has built on top of each other to create something supremely crushable.

Waves is our attempt to enhance the depth of each individual ingredient by bringing them together in a single neat package. Surfing the summer bounty right into bottle.

(Draft at Muted Horn, Berlin, 19 July 2025) Amber colour with no head. Fruity nose with red apples, apple skin, cherries and plums. Fruity tart taste with notes of red apples, plums, sour cherries, oak wood, red wine and a generous acidity in the finish. A light tannic bitterness. Medium body, dry. Interesting, with lots of different fruits and a solid acidity. Very nice.

Bottle pour at The Magnet, pours a clear pinkish amber with a tiny white head. Aroma is loaded with tart plums, a touch of cherries, and plenty of apple skins. Flavour has moderate acidity, with wild yeast, tart cherries, and plenty of tart plums. Low residual sweetness, with lots of plums and cherry that meld well with the wild yeast. Very good.

(750ml bottle from the cidery webshop) Pours lightly hazy bright pink with a small active white head. Aroma of delicate cherries, red pit fruit and soft red apple flesh, cherry-derived spicebox (cinnamon, marzipan), dried flowers, woodsy barrel, touches of grape, nice funky musty yeast profile, moderately intense and definitely fruity. Flavour is leaner than the nose, dry and lightly lactic yoghurty tart, with soft apple flesh, plums and cherries lending tannins, lots of floral and lightly spiced cherry hints, plummy acidity is quite light, into the finish subtle cinnamon, drying barrel, soft funk, clear mineral salts into the finish. Interesting, on the elegant and highly drinkable end of the spectrum but not without complexity. All the elements involved are balanced and do not overrun the final product. Nice!
