A complex blend comprised of multiple base recipes aged in a variety of oak formats forms the base for Florid. All such components were 100% spontaneously fermented and inoculated by native microflora during an overnight rest in our coolship. Upon blending, the beer was infused with peach blossoms and hibiscus flowers.

Brewery draught, 10/26/23. Clear, raspberry-hibiscus. Small, off-white head. Maybe nutty, earthy, spicy hibiscus, light floral notes from somewhere and mild Brett and lacto. Wheat-like grains in the background. Very mellow, clean. No big mineral or funk. Mint, floral notes, light earthiness. Like Arietta, there's minimal sourness (just tart) and no real funk. Odd. What's there is excellently-done and I love these adjuncts, but can't help wanting more funk/mineral and especially more body. These end rather bland, with chewy wheat but not a lot of depth.
