Votive No. 5 started its journey nearly two years ago as a double-mashed high-gravity stout that was laid down to slumber in Buffalo Trace and Willet Bourbon barrels. Last summer we lucked into a few Foursquare Rum barrels and this iteration of Votive was transferred into its second barrel treatment. We became aware of Foursquare in Barbados thanks to our friends The Real McCoy Rum. When we first experienced Real McCoy’s 12 and 14-Year Rums (aged in the tropics and subject to staggering evaporative loss and pickup of barrel character) they were absolute revelations as to what rum could and should be - we were floored by the opportunity to work with barrels from that incredible distillery and were blown away by the character they offered.

Brewery draught, 9/15/23. Inky, thick, dark. Tan head hangs around cover briefly. Nose is so frickin' rich and mellow, wow! Salted, roast peanut, silky chocolate, fudge, vanilla, bright, spicy bourbon, hints of roast and somehow no booze. In the mouth it's near perfect. The chewy, syrupy, thick, rich texture of the contemporary super Imperial stout yet without excessive sweetness and with no alcohol noted. Beautiful waves of bourbon and rum spice with no excessive roast. Tons of salinity, peanut, graham cracker, rich fudge and caramel. Hint of dark fruit on the finish. This is absolutely stunning.
