New England’s natural ecosystems ground Trillium with a sense of place. Our Habitat family of spontaneously fermented ales is a personal reflection of our terroir. Brewed using local New England malted barley and raw wheat, with aged hops, these beers rest overnight in our coolship, where they are inoculated by the native microflora unique to the area we inhabit. After years spent in oak prior to thoughtful selection and blending, we present our interpretation of the complex interplay between regenerative agriculture, unspoiled native lands, and centuries-old practices and traditions.

Bottle. Pours hazy dull orange. Peach, lemon, elderflower, apple cider vinegar, Riesling, minerally, grapefruit peel, tart, funky, tangerine, cranberry. Tight fizz. Very nice.

500mL blend date 1/10/23, drunk 7/28/23. A bit hazy, probably should have let this one sit longer. Bright, fiery, copper-maize. Large, off-white head via tons of carbonation. Slowly recedes to rocky retention. Oak is big and enjoyable, not buttery or sharp. Spontaneous notes of cheesecloth, light sulfur and vivacious Brett with fruit and deep, honey and wheat-like maltiness. Clean, snappy, bright, aromatic with no sign of acetic and only mellow, moderate lactic acidity. Bright, sharp, zesty lemon with piquant lactic acidity, earth, mineral, fruity brett and deep, well-attenuated, honey-rich malts. Soft wheat doesnt quite soak up all the somewhat sharp acidity and there's a touch too much perfume-like bitterness, but this is still really lovely and obviously still too young to really see what it's going to be. Will be nice to revisit these in years to come.

Pours cloudy deep gold into a tulip. White head with good retention conglomerates as it recedes leaving scant trailing spiders. Tart barnyard, lemon and bandaid aromas. Crisp with dry tannic oak, lactic lemon pith and crushed aspirin upfront turning to marshmallow and pie crust before the lasting oak finish.
