375mL bottle drunk 7/27/23. Clear, pale lemon-golden. Nose is light lactic acidity. Mellow. Pulp, skin, peppery yeast. Some Brett and lactic. Only a hint of piment in the background. Clean. Soft, sweet apple but well attenuated. Juicy, round, with capsaicin balancing gently. They've added a light, tasteful amount of pepper that builds up over the course of the bottle. Really delicate, very French. Delightful stuff. So artfully done.
