Behind the Times is our Dunkel Rauchbier. It honors tradition with a tedious mash procedure utilizing primarily dark Munich and smoked malts to create flavors and aromas of molten toffee, brown bread, mild chocolate, campfire, and caramel. A sturdy addition of Tettnanger hops provides balance and depth. A clean dark chestnut color and wispy o-white head only add to the mouth-watering appeal of this beer. It is thoughtful, elegant, and packed with nuance and character.

Beers that command your attention are a wonderful thing. Beers that can fade into the background as a complementary unspoken companion to celebratory moments in life are also beautiful things and deserve to be held in equally high esteem.

Side pull at Charlton, 4/9/24. Clear auburn-mahogany. Medium-sized, dark beige head slowly to light cover. Hazelnut and rich caramel with a peanut-like earthiness augmented by not-very-salty smokiness. Good biscuit and general base malt with a crisp, well-yeasted finish. Soft, richly-malty with good attenuation. Caramel and soft smoke with lingering vanilla, light nuts and earth with more drying char building. Very clean and very flavorful. Nicely smoked without needing to go the full salt and bacon route.

End of crisp mix case is imminent but lovely brews keep arriving. Darker chestnut pour and a finger of foamy beige head. Nose is smoky and coffee. Tastes of smoke but not overpoweringly hammy, coffee grind, nutty. Light chocolate, rootbeer. Creamy mouthfeel.

Pours mahogany tinged cola into a willi. Tan head with medium retention pancakes as it recedes to coat surface. Dark caramel and light smoke aromas. Thick with sweet caramel, roasted nuts, toasted brown bread and light smoke upfront turning to earthy bacon in the medium length finish.

Pours a dark, brown-black, with mid-sized, tan head. Aroma is roasted grain, malt, a touch of smoke. Flavor is smoke, roasted grain, malt, some coffee, nuts. Clean mouthfeel.
