Double Barrel Derivation has come in many different forms. From explorations in unique wine barrels, to being finished in exotic woods, to integrations with our favorite adjuncts. Double Willett Single Vanilla Derivation was brewed in February of 2021. Our O.W.K. recipe aged in Willett 5-year Bourbon Barrels until July of 2022 and then it was racked to Willett 4 year Bourbon Barrels for its final rest. At maturity, we racked the selected barrels to a bright tank where a blend of Vanilla Beans from Sri Lanka, Vanuatu, Madagascar, and Mexico were waiting to infuse a complimentary amount of vanilla to our double barrel expression.

375mL bottled 2023, at SP Cellar, 2/18/24. Dark, inky, viscous, no head. Beautiful, beautiful vanilla nose but really nicely in balance for its youth. Dark chocolate, rich caramel in plentiful quantities from the rich OWK base. For as much vanilla as they put in, it's not overdone in the least. Almost matches 10 Candles intensity of vanilla in its tasteful moderation of it. Rich, spicy bourbon with light lead and plentiful black pepper. No excess tannin, alcohol or sugar here, of course. In the mouth it's a wonderful balance of malt and barrel with vanilla coming on deep and rich, yet balanced, towards the finish. Soft, luxurious, properly attenuated and drier than most Derivations with the malt elegance more in line with the BBT series. Zero excess sugar, alcohol or anything aggressive from barrel. Wasn't expecting this one to be such a standout, especially given its youth, but never underestimate Corey.

Bottle. Pours black with no head the aroma is strong vanilla, bourbon, licorice, molasses, wood. Slick body, molasses, vanilla, bourbon, enjoyed this.
